TROY, N.Y. — The Collar City Mac Shack, Organa Juice Bar, and Soul Delicious held their respective grand openings inside River Street Market on Friday afternoon. River Street Market is a vibrant collection of diverse and delicious cuisine. The three new dining vendors join favorites Fox and the Burn, Hummicidal, Maria’s Healthy Smoothies and Bowls, Prime Burger and Shakehouse, and Taco Libre.
The husband and wife co-owner team of Haseim Townsend and Brenda Henry spoke about the excitement of following their passion and opening the Organa Juice Bar.
“It’s very exciting to have a grand opening. Me and my wife here we’ve been working on this for a while. This was something that was in our lifestyle already and we just decided to turn it into a business. So this day is a great day for us. I worked for the state for over 10 years and having my own business is what makes me feel the best,” Townsend remarked on following a passion and sharing it with the community.
“They can look forward to being surprised because even though all of our stuff is plant-based and vegan and vegetarian, it tastes just like regular stuff, anything you can get on the street but it’s way better and way healthier for you,” Townsend noted on menu offerings.
“Everyone should come down, check us out, support us and we appreciate the support,” Henry added.
Hannah Van Buren, who is already the co-owner of Hummicidal Humus, and The Fox and the Burn, talked about what it meant to open up the Collar City Mac Shack to open up along with other local vendors.
“It’s wonderful for all of us to come together, support other local businesses, especially in the downtown Troy waterfront district. I think this is a wonderful venue for groups of people who have every taste and every variety to try something new,” Van Buren said.
“When you stop by you can expect different types of cuisines for everybody’s different dietary needs. We gonna be doing events as well, so that’ll be another draw to the waterfront district,” Van Buren noted for patrons looking to peruse their menu.
For Soul Delicious owner Derrick Brown, it’s all about having a spot to call his own and serving up home cooking that soothes the soul.
“Very excited. I’ve spent many years in the culinary field working for others, it’s kind of exciting to know now that profit come up my end now and I can make some money instead of working on somebody’s clock,” Brown commented.
“Food for the soul. Simply good for the soul, like the logo is. Something different from a taco or a burger, more comfort food, more home cooking,” Brown explained regarding the variety on his menu.
