With summer approaching quickly, the craving for refreshing, high-vibe watermelon juice is real, but since not everyone has a juicer, we asked Bailey Ruskus aka Chef Bai to create a juice recipe that you can make with a blender and a fine mesh strainer.

“Juicing in this way is one of the best and easiest things you can do for a meal prep, as it’ll be the perfect pick me up mid-afternoon when the weather is hot or first thing in the morning to break your fast,” explains Ruskus. “Be sure to grab a watermelon with seeds too because they’re full of protein and too good to miss!”

Ingredients Needed:

  • 1 small watermelon, peeled and sliced
  • 1 cucumber, peeled
  • 1 orange, peeled
  • 5-6 mint leaves + extra for garnish

How to Make Watermelon Juice

  1. In a high powered blender, add in your cucumber, orange, mint, and as many watermelon slices you can fit because you may have extra.
  2. Blend on medium high for 20-25 seconds. Add in all the extra watermelon if you have any, and blend again for 15-20 seconds.
  3. Pour and strain the juice from the blender into a large mixing bowl through a fine mesh metal strainer. Use a spoon to stir the juice in the strainer through the pulp of the watermelon. Save the juice, and discard the pulp.
  4. Prep two tall glasses with ice, and pour in your juice. Garnish with a sprig of mint.
  5. Enjoy with a smile! Super refreshing and great for any hot summer days ahead!
