One of chef Phil Manganaro’s favorite summer ingredients — the humble mulberry — can’t be found on store shelves. But, it can be found in backyards, parks, and even along highways in New Jersey.
“This year, I’ve probably picked about 20 pounds over about seven to nine hours,” said Manganaro, chef and owner of Park Place Cafe & Restaurant in Merchantville, where he specializes in foraged ingredients. Foraging is the practice of seeking food in the wild.
